Oxmoor House Quickest Chicken Noodle Soup Recipe

With all the cooler air we’ve been having, I thought I’d post this yummy Chicken Noodle Soup recipe I just received in a yahoogroup I am in.

Oxmoor House Chicken Noodle Soup Recipe
Recipe Time
Total: 20 Minutes

Ingredients
8 cups water
2 tablespoons oil (I like to use sesame oil)
2 boneless, skinless chicken breast halves, cut into bite-size pieces
1 carrot, shredded
1 cup thinly slivered cabbage (like for coleslaw)
2 cloves garlic, minced or crushed
1 teaspoon peeled and grated fresh ginger (optional)
4 packages chicken- or oriental-flavor ramen noodles
Soy sauce to taste

Preparation
1. Bring water to a boil in a soup pot. While water comes to a boil, heat oil in a large skillet over medium-high heat until hot. Sauté chicken until browned on all sides and cooked through.

2. Once water comes to a boil, add sautéed chicken, carrot, cabbage, garlic, and ginger to pot. Cook 2 minutes, then add ramen noodles along with only 2 of the flavor packets that come with the noodles. Cook 3 minutes and not a second longer – ramen is best when not cooked to death. Taste, then add a slosh of soy sauce if you like. (I like.)

Note: If you don’t care for cabbage and carrots, or don’t have time to chop them, try frozen corn or peas. If you have a cup or two of already-cooked chicken in the freezer, or maybe a leftover piece or two of deli chicken, you can prepare this in 10 minutes.

Recipe: Homemade Applesauce Bread

This sounds like something I’d fix when we start getting fall weather. It would be perfect with a cup of coffee! :)

1 1/4 cups applesauce
1 cup white sugar
1/2 cup vegetable oil
2 eggs
3 tablespoons milk
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt

Directions
Preheat oven to 350 degrees F (175 degrees C).

Lightly grease a 9×5 inch loaf pan.

In a large bowl, combine the applesauce, sugar, oil, eggs and milk; beat well.

Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt; stir until smooth.

Fold in the pecans.

Pour batter into prepared loaf pan.

Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

Recipe: Hamburger Steaks

YUM-O! This sounds so good! I think we may end up with this for tomorrow tonight! :)

Hamburger Steaks
*This recipe feeds as many as you make patties for

Ingredients
Ground Beef (can use lean, ground chuck, etc)
1 Cup Beef Broth
All Purpose Flour
Vidalia or other sweet onion, sliced (optional or can replace with onion powder)

Directions
Heat one or two tablespoons of oil in a large nonstick skillet.

Press ground beef into doughnut shaped patties (the hole in the center will allow it to cook more evenly and will fill in as they shrink during cooking).

Dip each patty into flour on both sides and place in hot skillet over medium heat.

Cook for a few minutes on each side, until browned. Scoot patties to one side and add onions to skillet. Stir and cook for a few minutes until lightly browned.

Pour in 1 cup beef broth and cover. Allow to cook until meat is no longer pink in the center, about ten minutes.

Hooters Fried Pickles

I had to post this when I saw it in a yahoogroup I am in.  I LOVE Fried Pickles!

Hooters Fried Pickles
Author: CopyKat Recipes
Recipe Type: Appetizer
Prep time: 10 min
Cook time: 20 min
Serves: 4

Hooters fried pickles are perfect to make for your favorite game on TV, or anytime you want something with a bit of crunch and tang.

Ingredients
2 cups whole wheat flour
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 11 ounce jar hamburger dill pickle slices
2 cups buttermilk

Instructions
Preheat 8 cups of vegetable oil to 350 degrees in a large pot.

Drain dill pickles in a colander and then place into a medium sized bowl with the 2 cups of buttermilk.

Place all dry ingredients into a bowl and mix well.

Take about a handful of the pickles out of the buttermilk and dredge into the seasoned flour. Shake off excess flour, and place battered pickles into hot grease.

Be careful not to place too many pickles into the hot grease or the pickles won’t fry up crisp. Fry pickle slices until golden brown. Continue cooking pickles until all are done.
